Through fermentation and aging in French oak barrique we get a dimension of lactic, brie rind tartness, and a subtly oaky, vanilla cool whip airiness, all sliced by an apple juice acidity. Finally you are left with a mouthful of lightly salted cream, spooned over nectarines in the height of nectarine season.
