Living across the country in Toronto, they knew they needed to find someone with great experience and technical expertise. Pascal stood out. Not because he answered their questions about what dates to pick on, and how he would make their wine. Not because he’s an expert viticulturist and oenologist who trained in Bordeaux and has been head winemaker of many prestigious estates both in France and British Columbia.
